TOPEKA, Kan. (WIBW) – If you’re looking for some good bar-b-que, you should probably go test drive a Harley.
In Topeka, Harley Davidson and mouthwatering bar-b-que go hand in hand.
“I probably worker harder now that when I was general manager of Harley Davidson,” said Ray Morehead who owned Black Dog BBQ.
Morehead and his son-in-law Jeff run Henry’s BBQ Grill inside the Historic Harley Davidson at 21st and Topeka Blvd.
“Henry Patterson was the originator of Topeka Harley Davidson back in 1949, and so we kept his name as part of the diner,” explained Morehead.
Ray owns Black Dog Bar-B-Que, and had been operating the diner since 2006, where people come from miles around, for the bikes and the food.
“Oh it’s great. The ribs are great,” said one customer.
Just ask anyone else who stops by on a Friday afternoon, the one day a week they serve smoked babyback ribs.
“We have a lot of people who love our ribs and they sell out pretty quick,” Morehead said with a smile.
What gives them that delicious taste?
“Strictly hickory,” he explained as he opened the smoker showing he burning hickory logs.
Smoked for 7 hours right outside the store, marinated with just salt and pepper, Morehead says the unique taste is all in the sauce, which he makes himself.
“There’s tomato paste. There’s brown sugar,” Morehead listed off. “A lot of things that normal bar-b-que sauce has in it. It’s just a little mixture that we do that makes it special for us. And people seem to love it.”
Love it so much, he sells it by the bottle.
But you can’t have ribs, without a signature side. All Morehead’s recipes.
“Bacon sausage and beer beans. Yes there’s beer in them. You have to be 21 to drink them Shawn. Eat them, I’m sorry. And then we have our own coleslaw which is a coleslaw recipe that I designed over the years and people seem to love it too.”
You can tell by all the empty plates by the end of lunch.
Henry’s BBQ Grill is open Tuesday through Saturday from 11 to 2 and breakfast from 8 till 10-30 on Saturday.
